10 oz bag romaine or iceberg lettuce2 Roma tomatoes, cubed1/4 red onion, sliced2 oz can sliced black olives5 pickled pepperoncini pepperscroutonscreamy Italian dressing

Cucumber yogurt salad

1/2 English cucumber, diced1 cup plain yogurt1/3 cup cold water1 tsp dried mint1/3 tsp saltminced garlic (optional)olive oil (optional) Combine ingredients in a bowl. Let rest 30 minutes in refrigerator.

Corn avocado salad

1 lb corn kernels (e.g., thawed from frozen)1/4 red onion, diced1 avocado, cubed1/4 tsp cumincilantro, chopped1 lime In a large skillet, sauté corn in a couple tablespoons of oil. Move to large bowl and toss with salt, pepper, and cumin. Let cool. Add onion, avocado, cilantro, and lime juice. Stir.
