Tahini salad

1/3 cup tahini paste
1/3 cup lemon juice
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
2 Tbsp water

2 English cucumbers, diced
2-3 plum tomatoes, diced to same size
1/2 red onion, diced to same size
1/4 green bell pepper, diced to same size (optional)
1/4 cup fresh parsley, chopped

  1. In a large serving bowl, whisk together tahini, lemon juice, garlic, salt, and black pepper. Slowly whisk in water until smooth.
  2. Add the remaining ingredients and toss together. Toss again immediately before serving.
