orange peel and zest (optional)
- Combine generous pours of maple syrup and orange juice, a shot or two of whisky, and optionally, orange peel and zest. Put in a small saucepan over low heat until thickened.
- Cook salmon in a skillet with olive oil. Brush with glaze. (Alternatively, coat with glaze and bake at 375 F for 15 minutes or so.)
