2 eggplants, peeled and thinly sliced
2 eggs
2 1/2 cups bread crumbs
3 cups spaghetti sauce
8 oz mozzarella cheese
1/3 cup grated Parmesan cheese
- Beat eggs. Salt eggplant slices in a colander, and rinse off.
- Dip eggplant slices in eggs, then bread crumbs. Place in a single layer on a baking sheet. Bake in oven at 350 F for 5 minutes on each side.
- In a 9×13 inch baking dish, spread spaghetti sauce to cover the bottom. Add a layer of eggplant slices, and sprinkle with mozzarella and Parmesan. Repeat with remaining ingredients, ending with the cheeses.
- Bake at 350 F for 35 minutes.
