1 Tbsp olive oil
1 onion, diced
1/2 cup ajvar
2 cloves garlic, minced
1 tsp paprika
1/2 tsp onion powder
1/2 tsp cayenne pepper (optional)
1 cup white rice
15 oz can crushed tomatoes
2 cups vegetable or chicken broth
1 package frozen peas
parsley, chopped
feta, crumbled (optional)
- In a large pot, heat up olive oil, then add onion and cook until softened.
- Add ajvar, garlic, paprika, onion powder, cayenne pepper, and rice, and fry 2 minutes.
- Add crushed tomatoes and broth, stir well, and bring to a boil.
- Cover and simmer for 15 minutes, stirring occasionally.
- Add frozen peas and simmer for 5 minutes until peas are thawed and rice is done. (If necessary, add more broth or water.)
- Serve topped with parsley and feta.
