Almond cookies

1/2 cup butter, softened
1/2 cup sugar
1 egg
1 1/4 cups flour
1/2 cup ground almonds
3/4 tsp almond extract (or 1 Tbsp amaretto)

  1. In large bowl, cream butter and sugar. Beat in the egg, almond extract, and ground almonds. Gradually mix in the flour until well blended.
  2. Place on ungreased cookie sheets by the teaspoon. Bake 5-8 minutes at 400 F, until lightly browned.
