Spinach rice casserole

4 cups cooked rice (~2 cups dry)
2 lbs frozen chopped spinach
2 cloves garlic, minced
3 tbsp butter
4 eggs, beaten
1 cup milk
1 1/2 cups cheddar cheese, grated
1/4 cup parsley, chopped
2 tbsp. tamari soy sauce
1/2 tsp. salt
dashes, cayenne pepper
dash, nutmeg
1/4 cup sunflower seeds

  1. Saute garlic and spinach with salt in butter. Cook 2 minutes.
  2. Combine with all ingredients except sunflower seeds. Spread into buttered casserole dish, and sprinkle sunflower seeds and paprika on top.
  3. Bake covered for 42 minutes at 375 F.
