1 tbsp butter
1 clove garlic, minced
1/2 pound sausage
1/2 cup water
1 pound cut pasta (e.g., ziti)
1/2 cup grated Parmesan cheese
- Bring a large pot of salted water to a boil for the pasta. Cook until tender, and drain, reserving 1/2 cup of the cooking water.
- Put the butter and garlic in a skillet over medium-low heat. Remove sausage from casing, and crumble into skillet, as 1/2 inch or smaller pieces. Add the water, and adjust the heat so that the mixture simmers gently.
- Dress the pasta with the sauce, adding some cooking liquid if needed. Toss with salt, pepper, and Parmesan, and serve. Optionally, garnish with parsley, or use red wine instead of water for sauce.
