2 lbs medium sweet potatoes
1 tsp ground coriander
1/2 tsp ground fennel
1/2 tsp dried oregano
1/4 tsp ground cayenne pepper
1 tsp salt
3 tbsp vegetable oil
- Coarsely grind spices, and mix together spices, salt, and oil.
- Cut sweet potatoes lengthwise into 1-inch wedges.
- Brush wedges with oil/spice mixture and place on a baking sheet.
- Bake at 425 F for 20 minutes. Turn wedges over with a spatula and roast until tender and slightly golden, 10-15 minutes more. Serve alone or with ketchup.
