Latkes à la Greenthal

6 medium baking potatoes
1 small onion
2 eggs
3 tbsp flour or matzo meal
1/4 tsp pepper
1 tsp salt

  1. Peel potatoes, and grate potatoes and onion. Let stand 10 minutes so liquid will form.
  2. Stir in slightly beaten eggs and other ingredients, mixing well.
  3. Drop by spoonfuls into hot, well-greased skillet, and brown on both sides. Drain on paper towel, and serve hot, with sour cream and/or apple sauce. (Can be frozen and reheated in 350 F oven on baking sheet.)
