6 medium baking potatoes
1 small onion
2 eggs
3 tbsp flour or matzo meal
1/4 tsp pepper
1 tsp salt
- Peel potatoes, and grate potatoes and onion. Let stand 10 minutes so liquid will form.
- Stir in slightly beaten eggs and other ingredients, mixing well.
- Drop by spoonfuls into hot, well-greased skillet, and brown on both sides. Drain on paper towel, and serve hot, with sour cream and/or apple sauce. (Can be frozen and reheated in 350 F oven on baking sheet.)
