1/2 white onion, diced
2 cloves garlic, minced
15 oz can diced tomatoes
1/2 tsp oregano
1/2 tsp basil
1/2 tsp red pepper flakes
1/2 tsp salt
2 Tbsp tomato paste
2 oz cream cheese
1/4 cup Parmesan cheese, grated
1/2 lb penne
4 oz fresh spinach
- Cook penne in a large pot.
- In a skillet, saute onions and garlic in olive oil for 5 minutes.
- Stir in diced tomatoes (in juice), spices, and black pepper to taste. Mix in tomato paste and 1/2 cup water.
- Turn heat to low, and whisk in cream cheese until incorporated. Whisk in Parmesan, then add spinach and let wilt.
- Mix sauce and pasta, then serve.
