Potato gratin

3 tbsp butter
4 large yellow potatoes, peeled and thinly sliced
1 cup milk
2 oz grated cheese (Parmesan, Gruyere, etc)

  1. Grease a 9 x 13 baking dish with butter. Arrange thin slices of potato in a layer, overlapping edges slightly.
  2. Sprinkle on copious salt and freshly ground black pepper, and a portion of the cheese. Repeat until out of potatoes.
  3. Pour milk over potatoes. Dot the top of the gratin with the butter, sliced thinly.
  4. Bake at 350 F for about an hour. Halfway through, gently press the potatoes flat with a spatula to keep the top moist. Sprinkle the remaining cheese on top of the gratin for the last 15 minutes of baking. The gratin is done when the potatoes are soft and the top is golden brown.
