Spaghetti carbonara

1 lb spaghetti, cooked
2 tbsp olive oil
6 slices bacon, chopped
1/3 cup white wine
3 large eggs
2/3 cup grated Parmesan and/or Romano cheese

  1. In skillet, fry bacon in olive oil until crisp. Add white wine and simmer until wine evaporates.
  2. Beat together eggs, cheese, and plenty of salt and pepper.
  3. Pour bacon and egg mixtures into hot pasta and mix very well. (The heat will cook the eggs.)
