Spinach manicotti

10 oz (1 package) frozen chopped spinach
15 oz (1 package) ricotta cheese
1 clove garlic, minced
1/2 onion, minced
1 egg

1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 jar spaghetti sauce
1 cup water
1 (8 ounce) package manicotti shells

  1. Preheat oven to 350 F.
  2. Thaw and drain spinach. In a large bowl, combine ricotta, spinach, onion, and egg. Add in garlic, parsley, and black pepper. Mix in 1/2 cup mozzarella and 1/4 cup Parmesan.
  3. In a separate bowl, stir together spaghetti sauce and water. Spread half of sauce mixture in a 9 x 13 baking dish.
  4. Fill uncooked manicotti with cheese mixture, and arrange in a single layer in the dish. Cover with remaining sauce, and sprinkle with remaining cheese.
  5. Cover with foil, and bake in oven for 45 to 55 minutes, or until noodles are soft.
