10 oz (1 package) frozen chopped spinach
15 oz (1 package) ricotta cheese
1 clove garlic, minced
1/2 onion, minced
1 egg
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 jar spaghetti sauce
1 cup water
1 (8 ounce) package manicotti shells
- Preheat oven to 350 F.
- Thaw and drain spinach. In a large bowl, combine ricotta, spinach, onion, and egg. Add in garlic, parsley, and black pepper. Mix in 1/2 cup mozzarella and 1/4 cup Parmesan.
- In a separate bowl, stir together spaghetti sauce and water. Spread half of sauce mixture in a 9 x 13 baking dish.
- Fill uncooked manicotti with cheese mixture, and arrange in a single layer in the dish. Cover with remaining sauce, and sprinkle with remaining cheese.
- Cover with foil, and bake in oven for 45 to 55 minutes, or until noodles are soft.
