Snickerdoodles

1 1/2 cups white sugar
1/2 cup butter
1 tsp vanilla extract
2 eggs
2 3/4 cups all-purpose flour
1/2 tsp baking soda
1 tsp cream of tartar (or baking powder and less baking soda)
1/4 tsp salt
2 tbsp white sugar
2 tbsp ground cinnamon

  1. Combine sugar, butter, vanilla, and eggs. Mix well.
  2. Stir in flour, cream of tartar, baking soda and salt. Blend well. Shape dough into 1-inch balls.
  3. Combine 2 tablespoons sugar and 2 teaspoons ground cinnamon. Roll dough in cinnamon/sugar mixture, and place 2 inches apart on ungreased baking sheets.
  4. Bake at 400 degrees F for 8-10 minutes, and immediately remove from baking sheet.
